In November 1997, Planet Caviar aspired to share its passion for caviar and its expertise in researching and developing quality products. In becoming, since its beginnings, an importer of the best caviar from Russia and Azerbaijan and authorised to market Iranian caviar, Planet Caviar has established itself as an expert in these prestigious delicacies. Thanks to the experience it has acquired over the years, Planet Caviar has produced its own caviar : imported, aged, selected and packaged to order in its laboratory in Geneva, the result of traditional craftsmanship.

Diversification of sources and species

PLANET CAVIAR attaches great importance to the diversity of species and the traceability of their sources. These different species of sturgeon have been carefully selected in our production farms in order to offer customers a variety of different sources. In 2009, since the ban on fishing in the Caspian Sea, PLANET CAVIAR has worked with sites producing farmed caviar responding as closely as possible to the standards of wild caviar.
Acipenser baerii
The fish: originating from the rivers of Siberia, it is mainly raised in France, China, Germany. The species reach maturity at the age of 7, 8 years, can live up to 20 years and reach a weight of over 15 kg. It is currently the most produced species on the international market.
Caviar: the eggs can be dark brown, gray or black. They have a shiny, crystalline appearance. Diameter of the egg: approximately 2,6mm. Light taste of dried fruits.
Acipenser Transmontanus or white sturgeon
The fish: In the wild, it is found in the Amur River, between China and Russia. It is mainly bred in China and reaches maturity from 8-10 years. It can live 30 years and reach a weight of more than 20 kg.
Caviar: the eggs are light brown, light or dark gray in color, with a round and rolling diameter of about 2.9 mm and a strong taste with a slight fruit finish.
Acipenser schrenckii
The fish: In the wild, it is found in the Amur River, between China and Russia. It is mainly bred in China and reaches maturity from 8-10 years. It can live 30 years and reach a weight of more than 20 kg.
Caviar: the eggs are light brown, light or dark gray in color, with a round and rolling diameter of about 2.9 mm and a strong taste with a slight fruit finish.
Schrenckii-Dauricus
The fish: it is a cross between Acipenser Schrenckii (female) and Huso Dauricus (male). It is mainly bred in China. It reaches maturity at the age of 8-10 years, can live up to 60 years and exceed the weight of 50 kg.
Caviar: the eggs are pearl gray or dark gray and golden brown to dark brown. The diameter is about 3 mm. Taste buttery and long in the mouth.
Osciètre (Acipenser gueldenstaedti and Acipenser Persicus)
The fish: it is found in the wild in the Caspian Sea and the Danube. It is farmed in many countries such as China, Germany, Bulgaria, Uruguay, Italy... It reaches maturity from 10-11 years, can live 50 years and the weight can exceed 20 kg.
Caviar: the eggs are golden yellow or light gray. They have a diameter of about 2.9mm. They are firm and burst in the mouth with a slight nutty taste.
Huso Dauricus or Kaluga
Fish: In the wild, it is found in the Amur River. It is mainly farmed in China. It reaches maturity between 15 and 20 years, can live up to 100 years and reach a weight of 1000 kg. It is one of the largest sturgeons.
Caviar: the eggs are pearl gray to dark gray in color, soft and shiny. The diameter is about 3.2 mm. Strong aromatic taste.
Sevruga (Acipenser Stellatus)
The fish: it is one of the smallest sturgeon. It is found in the Caspian Sea and Black Sea. It is raised in Bulgaria, Italy and USA. It reaches maturity at the age of 8 years.
Caviar: the eggs are very small, varying from light to dark gray. Iodized and very pronounced taste. Ideal for those who prefer strong caviars.
Beluga (Huso Huso)
The fish: it is the biggest of the sturgeons. It can reach 5 meters and weigh more than 1,000 kg in the wild. It is the rarest fish and the most difficult to catch because it lives in the depths. It is found in the Caspian Sea. It is raised in Bulgaria, Iran and China.
Caviar: the eggs are light to dark gray in color. The diameter is more than 3.2 mm. Smooth, buttery taste.
